![]() I often find myself trying to do a million things at once. As a former waitress, I learned the skill of never being empty handed. Always look for something to do! This can't be more true at dinner time. Whether it's prepping dinner, convincing baby girl to eat fruit, doing a load of laundry, or trying to get brother in the bath before eating. I feel like the hour between 5-6 pm is a black hole!!! I simply love sheet pan meals for all of these reasons . . . I can prep them somewhat ahead of time & do other things while it bakes! This recipe is ultra low maintenance once everything is chopped up. The seven ingredients are most likely things you already have on-hand. Put it in the oven & get your multitask on! You are going to love this slightly sweet & definitely savory one pan dish!

It is a “clean out week” at our house, which means all meals are made from existing food in our fridge, freezer, and pantry. This is an excellent way to use different combinations of ingredients that you wouldn’t normally think of and clean out your reserves. You have to be somewhat creative or adapt recipes that you already use. Some of my best meal creations have come to fruition during clean out week. I try to do a clean out week every few months. Obviously it helps if you have some existing food that will sustain your family! You can’t live off of saltines, ramen, and condiments for the week...that’s asking for nightly takeout! I wanted to start fresh in the new year so I took on this challenge for the last week of the year. I would secretly be happy if our cupboards looked like The Who’s after the Grinch stole everything! Tonight’s dinner had one main goal...use the sausage in the fridge. I recently saw a recipe where sausage was used on a sheet pan meal, genius! I tried to think outside my usual box (Mexican or Italian) and came up with adding Greek flavors. I’m not expert on Mediterranean cuisine but I knew I had olives, feta, onions, and tomatoes. BAM! A new family favorite is born.... |
