It comes together in about five minutes....what could be better? Let's face it a cheese plate and a good dip are considered a meal in the summer. This bruschetta is basically a form of dip in our house and can be transformed into a variety of other versions. I have included the original recipe and a tex-mex take on it. I have always told my husband I think I should have been Italian. The food, the beautiful countryside, the fashion, the culture. I’m all in! Of course I am proud to be American but the Italian lifestyle simply calls to me. Italian cuisine is wonderful in many ways… Pasta Cheese Wine Need I say more? Unfortunately we aren’t all blessed with the figure of Giada de Laurentiis. We can’t consume pasta on the daily and still look beach ready! So why not make Italian favorites a bit lighter? I am always working to make our dinners more nutritious, I want to make sure we aren’t splurging at every meal. I came up with this recipe to create a lighter baked version of a classic dish, with all the flavors that we crave. The final product is a mix of classic Italian and American. Full disclosure… my four year old would only eat the cheese on this dish. Maybe more adventurous children would be willing to try it? You can swap the eggplant for chicken if that's more your thing, simply follow the recipe from step three. Serve this dish with jarred tomato sauce atop cauliflower gnocchi (Trader Joe’s), Chickpea pasta (Banza), or your favorite pasta!
