Prep Ahead Breakfast Bites

I never know what to eat.

I always struggle with eating something in the morning. Our mornings are always so busy & frantic. I am lucky if I get out of the door with everything I need! This has been a real struggle since going gluten free. All of my go-to options are now off limits! Which mostly consisted of bread. :)

Planning is key for me.
It always helps when I have breakfast items prepped ahead of time to help with the crazy. This way I know there are healthy options that don't consist of a granola bar & a cup of coffee.

These three prep-ahead breakfast ideas are filling, made from real food, easy to prep & satisfy all eaters at home. I always block off time on Saturday or Sunday to prep a few things for the week ahead. They can all be stored in the fridge & reheated for an easy guilt-free breakfast!

I am always looking for a shortcut.

I personally make cooking & eating at home a priority in our home. That doesn't mean everything is from scratch! I am a busy working mom . . . after 4:00 pm on most days you can find me running this way & that trying to fit everything in. So taking a few shortcuts is a necessity for me!

I wanted to create somewhat of a classic "dump & bake" type casserole. Is there a better term for it? I don't know! Something that I could prep ahead of time if necessary or mix together & throw in the oven. Adding meals like this to our week helps me get other tasks done simultaneously. The trick was to make it gluten free & add some nutritional value. I grew up eating chicken & rice or chicken & noodle casseroles. . . .this is somewhat reminiscent of those flavors with a few 2021 twists!

The Chicken & Quinoa Bake takes about fifteen minutes to prep then into the oven. Prep can be done the night before (see note on recipe). Once it's in the oven you are free to get your million other things done while it bakes! I personally gave the kids a bath & felt like super mom. Clean kids & a healthy warm dinner on the table. Winning!

*The kids liked this recipe! Anything with cheese & chicken they love! I would leave out the chives if your children don't care for onion flavors though. You can sprinkle them over your serving at the end.

New year same me

I know we all don't want to hear it but....

2021 MIGHT be similar to 2020. There I said it. 

It's time to accept a new sort-of normal. The security we once felt leaving our home just isn't there anymore. The people, places & activities we once took for granted are now cemented in our hearts. The pain & suffering that many people felt will not be forgotten. There is still the weight of the unknown. The questions. The anxiety. The hope.

It's time to start rebuilding.....to create something new.

I truly believe life is what you make it & I intend to squeeze what I can out of it!!

In the past year I have . . . 
. . . deepened the unbreakable bond with my family members
. . . spent countless hours outdoors
. . . soaked up smiles, tears, laughter & air hugs
. . . improved my daily health 
. . . appreciated what surrounds me each & every day
. . . connected with new & old friends in ways I never thought possible
  & most importantly learned to really listen to myself


Instead of making resolutions I want to remain intentional.

For me this means. . .  thinking / imagining how I want my day to go.
What are the things I want to remember to do each day?
What intentions do I have for each part of my day?
How does this relate to my relationships with others around me?

I came up with an easy way to keep these thoughts in the forefront. Being a visual person I knew I needed something I could SEE daily. Growing up I remember my grandmother taping important quotes, articles or notes all around the house. Each time I found one, I would read it to myself & imagined what she wanted out of it's daily reminder. 

The printable below is how I intend to make myself remember my intentions. I filled in my top 3 intentions for several spaces in my life: bathroom (morning/evening routine), kitchen (where most family time is spent) & my desk at work. The example below (on right) is for my desk. Simple reminders for the best version of myself.

A QUICK dinner!! English muffins (mine were gluten free) with shredded chicken, pesto, cheese & spinach. Bake on 350 degrees for 8-10 mins. Serve with your favorite vegetable.
